Cheesy Mexican Chicken burritos with Mexican Rice for Jana

So you all know Jana.. the fabulous Boobies from Boobies, babies and a blog. Well she openly admits she is not a chef, and she is constantly telling me I need to come cook for her. Well I keep telling her to move down here lol. Then my son can serenade her and I will be the cook and we will all live happily ever after.. any other fairy tale. I promised her even she could make this.. 5 ingredients only have to boil water and bake till cheese melts. Simple stuff.. So here it is.

Cheesy Chicken Burritos with Mexican Rice

Quick easy Chicken Cheese burritos with only 5 ingredients.

Ingredients

  • 3 cans Fiesta Nacho Cheese Soup (Campbells brand)
  • 2 cans Cheddar Cheese Soup (Campbells Brand)
  • 3 cups Milk (For mixing with soups)
  • 2 bags Flour tortillas, burrito size
  • 1 box Queso Blanco Velveeta (cut into slices)

  • 5lb chicken strips (skinless, boneless)

Directions

Step 1
Boil your chicken strips in lightly salted water until they are completely cooked and white all the way through, drain and shred into pieces. Preheat oven to 400.
Step 2
While boiling the chicken open all of the cans of soups and mix with the milk, stirring briskly making a thin base.
Step 3
Combine chicken and soup into one container stirring well to ensure it is thoroughly mixed
Step 4
In a glass 9x13 baking dish take the flour tortillas and scoop some of the chicken/cheese mixture into one folding it over as you would a burrito. Push each one as tight as possible to ensure you get as many in the pan as you can. I use 2 baking dishes and average 6 burritos per dish.
Step 5
Once you have finished filling the baking dishes with the burritos and chicken mixture pour remaining soup/chicken mix over the top of them.
Step 6
Place the sliced Queso Blanco Velveeta over the sauce and burritos to place in oven for baking. Bake roughly 25 minutes or until cheese slices melt completely.
Step 7
For the mexican rice I get Minute Rice Mexican blend and simply follow the directions on the box. This can be made while the burritos are cooking in the oven.
Step 8
Remove burritos and serve over Mexican rice you can add taco sauce or sour cream even lettuce tomato and onion if you wish. My kids LOVE this stuff and it is a weekly dinner request. Plus it is super easy to make.
